National recognition for two Virginia chefs

Food & Wine magazine has named two Virginia chefs to its annual list of   “10 Best New Chefs.”

The recognition went to John Shields, who left Chicago in 2008 to become a chef at Town House restaurant in rural Chilhowie, and Clayton Miller, of Trummer’s on Main in Clifton.

Shields moved to Chilhowie with his wife, Karen Urie Shields, the executive pastry chef, to the small town in the Blue Ridge Mountains. Town House is located in Southwest Virginia, about 30 miles southwest of Wytheville. The 30-seat restaurant features seasonal cuisine with a la carte, four-course, 10-course and extended tasting menus.

Miller works at Trummer’s on Main in Clifton, a quiet, historic town in Northern Virginia.  He opened the restaurant with Stephan and Victoria Trummer in 2008. He previously worked at Daniel in New York City and The French Laundry in Yountville, Calif. The menu offers “Creative American” cuisine that focuses on “simple, globally focused” cuisine.
